Generally, wedding reception planning tends to begin about 9-12 months before the event, longer if you are planning a big event in a popular location. Bottled wine, champagne, sparkling juices, and sodas, can be bought that far in advance as long as you don't subject them to overly warm temperatures. 70s would be fine. When you're up in the prolonged upper 80s, deterioration is faster so you'd probably go only a month ahead.

Watch out for corkage fees if you bring in your own drinks, rather than using the facility's sources.
